When Mike was done singing his oysters to bed @ night he prepared this dish...Cleaned squid tube stuffed with a Crab & Scallop stuffing with a coating of red sauce baked for 40-50 min. Great Job!


1) Steam 18 clams 2) 4 cups of water 3) one pealed medion poatoe pealed 4) small onion 4 stalks celery 5) 1/2 cube of chicken 6) 1/2 tsp white pepper 7) 1/4 tsp dill seed NO SALT 1- cut clam bodies in three 2- chop onions fine 3- cut potatoes into squares 4- celery chop fine 5- add 2-3 more cups of water


1) Steam 12-16 Quahogs in a pan of 2" water until they open. 2) Remove clam from shell and save broth. Chop in processor (do not puree) 3)Prepare stuffing...cook bacon and use the same pan with a little bit of the fat to fry onions and some fresh hot peppers. Now add fresh herbs Rosemary-thyme-oregano-parsley-basil. Mix crackers with onions and spices while adding broth as needed. a small amount of Romano cheese can be added also. Taste mixture before adding salt, it may not need it.

easy one... clean and dry squid. put a cast iron pan on a grill, close grill and get pan very hot. Put squid in a bowl and mix melted butter over squid and add Paul Prudhomme seafood magic spice.Cook on pan for no more than 2 min!!! remember for squid ether cook real fast (under 3 min) or real long ( over 30 min)
